This single variety flagship is crafted using Honeycrisps, a common dessert apple rarely used in the production of hard cider. Wild Willamette Valley apple yeast is propagated from uncultivated age-old orchards, then apples are pressed right after harvest and fermented at cool temperatures. The result is an apple-forward cider with high acidity that highlights our local flora and microfauna.
